An easy low fat recipe for baking chicken, potatoes, & green beans that is healthy and delicious too. Using foil makes clean-up easy on grill or in oven.

We’ve all heard people who live alone or cook for two say they eat unhealthy food because it is just too hard to cook smaller quantities of healthy food. Well with this recipe, they have no more excuses. By using Reynolds non-stick foil and McCormick’s Grill Mates spices, chicken, potatoes, and vegetables can be easy to prepare, low fat, and full of flavor whether you are cooking for one or 101.

Low Fat Recipe For Potatoes Seasoned With McCormick’s Grill Mates

Ingredients:

  • 2 medium red potatoes per serving
  • 1/2 medium white onion per serving
  • 1/8 cup extra light olive oil per serving
  • 3 tbsp McCormick’s Onion & Garlic (or any flavor) Grill Mates spice per serving

Directions:

  1. Preheat oven to 375 degrees.
  2. If cooking for two, line 12″ x 8″ (approx. size) metal pan with Reynolds Non-Stick Foil.
  3. If cooking for two, double the ingredients above, then peel and cut potatoes into 1 inch squares.
  4. Chop onion and spread onion and potato pieces in foil-lined pan.
  5. Pour olive oil over potatoes and onion and toss to coat.
  6. Sprinkle Grill Mates spice over potatoes and onion.
  7. Cover pan tightly with regular foil, and back for 35 minutes.

Low Fat Recipe For Making Flavorful Chicken and Fresh Green Beans

Ingredients:

  • 1 chicken breast with bone and skin removed per serving. For the best flavor use natural chicken that has not been treated with preservatives like Amish chicken or chicken from an organic farm.
  • 4 oz. fresh green beans, trimmed and snapped, per serving
  • 1/8 cup extra light olive oil per serving
  • 1 tsp garlic salt per serving
  • 1/4 tsp black pepper per serving

Directions:

  1. Preheat oven to 375 degrees.
  2. If cooking for two, line 9 1/2″ x 6″ (approx. size) metal pan with Reynolds Non-Stick Foil.
  3. If cooking for two, lay 2 chicken breasts side-by-side at one end of pan.
  4. If cooking for two, double ingredients above, and spread green beans at opposite end of pan.
  5. Pour olive oil over chicken and green beans.
  6. Sprinkle garlic salt and pepper over chicken and green beans.
  7. Over pan with regular foil, and poke 4 small slits with a knife in foil, and bake for 35 minutes.

This meal can also be prepared on a grill by wrapping the food completely in foil, but it is just as easy to prepare in the oven where lining the pans with foil makes cleaning up a snap. The two pans mentioned above easily fit on an oven rack side-by-side, so the whole meal can be cooked at the same time. If you are preparing the meal for one, it can all be cooked in the one 12″ x 8″ pan.

Because the food is wrapped in foil, it turns out tender and full of flavor. There is no need to add any high fat sauces or seasoning after it is prepared to enhance the taste. Calories per serving are approximately 800, and fat count per serving is around 55 grams. So no excuses, my friends, cooking healthy for one, two, or more, can be easy as pie…or chicken in this case.
