Soup recipes are perfect for cold weather meals during the winter season. What beats a homemade chicken soup recipe that’s easy, warming and delicious?

Cold weather meals come to the front when our winter season hits and chicken soup is among the top rated soup recipes in the US. When I think about chicken soup, memories from my childhood pop up. Mom in the kitchen, making that miracle chicken soup that made you feel better and put everything in the world right again.

Chicken Broth

Your first step is to make the broth for the chicken soup. All you need is the chicken, onion, celery, carrots, salt, pepper and water. Rough chop the vegetables and throw everything into a stock pot and let it cook. You can choose between using a whole chicken or parts of a chicken, the option is yours. Always make sure that you have enough water to cover the ingredients so that they cook completely.

Once everything is in the pot, let it boil and reduce the heat cooking, until the chicken either falls off the bone or if you are using boneless parts of the chicken, the meat should be tender. When everything is cooked, remove the chicken; set it aside. Drain the broth into another pot; this is going to be your soup starter broth.

 

Remove the chicken meat from the bones; cut the meat up into bite sizes and set them aside. You can discard the stock vegetables and the chicken bones.

Chicken Soup

In a deep soup pot, add your olive oil, garlic, celery, onions and cook until the onions are clear. Put the cut up chicken meat into the pot and cover everything with your broth from above. If you are short of chicken broth, you can add more water or use a bouillon cube. Do a taste test, salt and pepper as you need.

Add potatoes and carrots, let everything cook to a boil, reduce and let the pot simmer about 45 minutes or until the vegetables are cooked. I enjoy my chicken soup over a scoop of mashed potatoes. It’s simply delicious. You can even add homemade dumplings, rice or pasta to this dish. Frozen vegetables like peas and carrots also work in this chicken soup recipe.

This is a basic homemade chicken soup recipe that you can reinvent and make yours, by changing or adding ingredients. If you like the clear broth that you made, perfect. If you would like a cream broth to this chicken soup, add some milk or cream. Remember cooking is about eating what you like and what tastes good to you at the moment.

Ingredients:

  • 3 lbs. chicken or a whole chicken
  • 2-3 cloves of garlic
  • olive oil – enough to cover the bottom of the pot
  • 1 onions – sliced or chopped
  • 2 stalks of celery – sliced
  • 3-5 cups of broth – enough to cover your ingredients
  • 2-3 carrots – chopped
  • 3 potatoes – chopped

Prepare:

Start with your olive oil, garlic, onions and celery, add in your chicken broth that you made earlier; salt and pepper. Next put in the chicken that you cut up and add the carrots and potatoes. If you need to add more liquid add some water for a clear broth; milk or cream for a creamy broth.

Let everything come to a boil, reduce and let is simmer. Remember that everything but the vegetables are cooked already. In just about 30 – 45 minutes you have a meal ready to serve.

Serve:

Ladle into a deep soup cup, add parsley for garnish and eat.
